Two-ingredient Spinach Gnocchi
Try this easy gnocchi recipe made from only pasta flour and tossed in a quick caramelised onion sauce.

Ingredients:
100 g Spinach
200 g Pasta flour (type 00)
½ tsp Salt
2 tbsp Water
For the sauce (optional):
1 tbsp Olive oil
1 tbsp Unsalted butter / Vegan butter
1 Onion (sliced )
1 Garlic clove (crushed )
Black pepper (to taste )
4 tbsp Parmesan (grated ) / vegan parmesan
Recipe:
- Add the raw spinach, pasta flour, water and salt to a food processor. Blend until a dough forms.
- Work the dough on a floured surface for 20 seconds, just until it comes together.
- Using kitchen scissors, cut the dough into gnocchi directly over boiling salted water. Cook for 2 minutes, or until the gnocchi floats to the surface of the water.
- For the sauce, heat olive oil and butter in a frying pan. When hot, reduce the heat and cook the onion and garlic until tender.
- Drain the gnocchi and toss it in the sauce for 3 minutes. Season with black pepper and serve with grated parmesan if you like.
How to store
Store in an airtight container, in the fridge, for up to 3 days.
