Spring Onion and Goat Cheese Toast Muffins
These "muffins "are super quick and fun to make – and there's no muffin batter involved! For this recipe, you'll just push a slice of soft white bread into the holes of a muffin tin, then you add goat cheese (or vegan cheese), chopped spring onions, an egg and seasonings. Bake them for 15 minutes for a perfect savoury breakfast or quick lunch.
Substitute:
No spring onions? Use chopped leeks, mushrooms or tomatoes.
No goat cheese? Swap for mozzarella or camembert.
No paprika? Use cayenne pepper, ground cumin or ground coriander.

Ingredients:
4 slice Soft sliced loaf
50 g Goat cheese
25 g Spring onions
4 Eggs
1 tsp Smoked paprika
Salt & pepper
Recipe:
- Preheat the oven to 180 C/160 fan/gas mark 4. Use a rolling pin to flatten the bread slices.
- Push a slice of soft white bread into the holes of the muffin tin. If the slices are too big, you can cut them to fit the tin.
- Into each muffin cup, add the cheese, chopped spring onions, an egg, paprika, salt and pepper.
- Bake for 12-15 minutes, until the egg white is cooked and the yellow soft or cooked to your liking.
- Enjoy!

Store in an airtight container, in the fridge for up to 3 days.
