Spiced Swede & Carrot Soup

A quick, easy and healthy veggie soup recipe made with swede and carrots and warming spices, perfect to serve on a cold day.

Ingredients:

450 g Swede

450 g Carrot

1 Onion

3 tbsp Olive oil

1 tsp Ground coriander

1 tsp Ground turmeric

1 tbsp Thyme

1 litre Vegetable stock (warm )

Recipe:

  1. Preheat the oven to 190C/170c fan/5 gas mark. Peel and cut the swede into chunks. Wash the carrot under cold water and cut into chunks too. Peel and cut the onion in chunky wedges.
  2. Add the swede, carrot and onion to a large baking tray. Drizzle with olive oil and season with ground coriander, turmeric, thyme and a generous pinch of both salt and pepper. Toss to coat. Roast for 40 minutes, or until tender and lightly caramelised.
  3. Add the roasted vegetables to a blender, and pour over the warm stock. Blend until smooth. Season to taste with salt and pepper.
  4. Divide into bowls and serve with fresh herbs, croutons or pesto. Search “spinach pesto” on the website to make your own.

Store in an airtight container, in the fridge, for up to 3 days or in the freezer for up to 3 months.
