Sesame Banana Fritters

A little twist on the classic fritter pairing bananas with sesame. Delicious served with a scoop of ice cream.

Ingredients:

4 Bananas

100 g Plain flour

20 g Golden caster sugar

1 tsp Baking powder

70 ml Milk of choice

1 tsp Vanilla extract

1 Egg (or 1 tbsp flaxseed )

1 tsp Sesame seeds

1 tbsp Unsalted butter (for cooking )

1 tbsp Sesame oil (for cooking )

For serving (optional):

Vanilla ice cream

Icing sugar

Recipe:

  1. In a mixing bowl, add the flour, baking powder, sugar, sesame seeds, egg (if vegan, add your flaxseed mixed with 2 tbsp of water), vanilla and milk of your choice. Mix until combined and set aside.
  2. Peel the bananas, then cut them in half and them lengthwise.
  3. Add the bananas to the batter and mix until well-coated.
  4. Melt the butter and sesame oil in a large frying pan over a medium-high heat.
  5. Lift one banana at a time from the batter and gently place in the pan. Working in batches, cook the fritters for 3-4 minutes on each side, until puffed and golden. Repeat until you have cooked all the fritters.
  6. When cooked, serve the fritters with icing sugar and a scoop of vanilla ice cream if you like. Enjoy!

How to store

Keep in an airtight container in the fridge for up to 3 days. Reheat in a hot oven.
