Potato Batata Harra with Thai Paste

An Oddbox twist on Batata Harra; a spicy Lebanese dish of crispy potatoes tossed in spicy tomato sauce. Lovely served with yoghurt, lemon juice and fresh coriander to balance the flavours.

Ingredients:

500 g Potatoes

Salt

2 tbsp Olive oil

200 g Oddbox Thai red curry paste

For serving:

6 tbsp Yoghurt (or vegan yoghurt )

10 g Fresh coriander

½ Lemon (cut into wedges )

Recipe:

  1. Preheat the oven to 200C/180c fan/6 gas mark. Cut the potatoes into chunks. Add the potatoes to a saucepan and cover with cold water. Add a generous pinch of salt. Bring to the boil, then reduce to a simmer and parboil for 5 minutes. Drain and allow to steam dry for 5 minutes.
  2. Spread the potatoes onto a baking tray lined with baking paper. Drizzle with olive oil and season with a little salt and toss well. Bake for 30 minutes, or until golden brown.
  3. Meanwhile, warm up the Thai Curry Paste in a small saucepan. 
  4. Once the potatoes are golden brown, pour over the warm Thai Curry Paste and toss to coat.
  5. Serve with yoghurt, lemon wedges and fresh coriander if you like.

Store in an airtight container, in the fridge, for up to 3 days, or in the freezer for up to 2 months.
