Potato Batata Harra with Thai Paste
An Oddbox twist on Batata Harra; a spicy Lebanese dish of crispy potatoes tossed in spicy tomato sauce. Lovely served with yoghurt, lemon juice and fresh coriander to balance the flavours.

Ingredients:
500 g Potatoes
Salt
2 tbsp Olive oil
200 g Oddbox Thai red curry paste
For serving:
6 tbsp Yoghurt (or vegan yoghurt )
10 g Fresh coriander
½ Lemon (cut into wedges )
Recipe:
- Preheat the oven to 200C/180c fan/6 gas mark. Cut the potatoes into chunks. Add the potatoes to a saucepan and cover with cold water. Add a generous pinch of salt. Bring to the boil, then reduce to a simmer and parboil for 5 minutes. Drain and allow to steam dry for 5 minutes.
- Spread the potatoes onto a baking tray lined with baking paper. Drizzle with olive oil and season with a little salt and toss well. Bake for 30 minutes, or until golden brown.
- Meanwhile, warm up the Thai Curry Paste in a small saucepan.
- Once the potatoes are golden brown, pour over the warm Thai Curry Paste and toss to coat.
- Serve with yoghurt, lemon wedges and fresh coriander if you like.
How to store
Store in an airtight container, in the fridge, for up to 3 days, or in the freezer for up to 2 months.
