Pomegranate & Granola Breakfast Parfait

Red pomegranate jewels paired with a tangy Greek yoghurt and crunchy granola for an express breakfast.

Ingredients:

1 Pomegranate

250 g Greek yoghurt (or vegan alternative)

4 tbsp Granola (any )

1 tsp Orange zest

Recipe:

  1. Wash the pomegranate under cold water. Slice the pomegranate in half across the middle, then hold it cut-side down in your hand over a bowl of water.
  2. Get the pomegranate in the water and push the seeds out. If needed, cut the pomegranate in quarters and repeat. Working in water will prevent any mess. Drain and use the seeds in the next step.
  3. Spoon half the yoghurt into 2 glasses. Top with a layer of granola and a layer of pomegranate seeds.
  4. Repeat the layers, ending with a scattering of pomegranate seeds and orange zest.
