Oddbox Chopped Salad

For this salad you can use whatever you get in your Oddbox such as lettuce, mixed leaves, tomatoes, cucumber, avocado, radishes and snap peas.

Substitutes:

  • No mixed leaves? Use lettuce instead.
  • No apple cider vinegar? Use lemon juice instead.
  • No chickpeas? Try with quinoa, lentils or pasta instead.

Ingredients:

a bunch of Mixed salad leaves

½ Cucumber

½ Red onion

1 Green pepper

6 Radishes

6 Sugar snap peas

1 Can chickpeas (drained)

For the vinaigrette:

2 tbsp Olive oil

1 tbsp Apple cider vinegar

1 tbsp whole grain mustard

Salt & pepper

Recipe:

  1. Add the mixed leaves, deseeded pepper, deseeded cucumber, peeled red onion, radishes, and snap peas to a chopping board. Finely chop.
  2. In a bowl, add the dressing ingredients. Whisk until combined.
  3. Add the chickpeas and chopped salad. Toss and enjoy!
