Oddbox Chopped Salad
For this salad you can use whatever you get in your Oddbox such as lettuce, mixed leaves, tomatoes, cucumber, avocado, radishes and snap peas.
Substitutes:
- No mixed leaves? Use lettuce instead.
- No apple cider vinegar? Use lemon juice instead.
- No chickpeas? Try with quinoa, lentils or pasta instead.

Ingredients:
a bunch of Mixed salad leaves
½ Cucumber
½ Red onion
1 Green pepper
6 Radishes
6 Sugar snap peas
1 Can chickpeas (drained)
For the vinaigrette:
2 tbsp Olive oil
1 tbsp Apple cider vinegar
1 tbsp whole grain mustard
Salt & pepper
Recipe:
- Add the mixed leaves, deseeded pepper, deseeded cucumber, peeled red onion, radishes, and snap peas to a chopping board. Finely chop.
- In a bowl, add the dressing ingredients. Whisk until combined.
- Add the chickpeas and chopped salad. Toss and enjoy!
How to store
Store in an airtight container, in the fridge, for up to 2 days.
