No-cook Sesame Carrot Salad

Ingredients:

3 Carrot

1 tbsp Apple cider vinegar

1 tbsp Lime juice

1 tbsp Soy sauce

1 tbsp Sesame oil

1 tsp Maple syrup

1 tsp Sesame seeds

1 tbsp Parsley (chopped )

Black pepper (to taste )

Recipe:

  1. Using a vegetable peeler, finely cut the carrot into thin slices and place in a bowl.
  2. Add all of the other ingredients and toss well to coat the carrot. Eat straight away or let it sit in the fridge to marinate overnight.
