Lettuce Summer Rolls
These colourful summer rolls are filled with fresh flavours, using fresh coriander, lime and veg all wrapped in lettuce. They're served with a tangy chilli sauce for dipping.

- Other filling options? Try with mango, radishes, spring onions, cucumber, rice noodles, crispy tofu or any protein of your choice.

Ingredients:
400 g lettuce
30 g Coriander leaves
400 g Red cabbage
2 Limes
200 g Carrot
2 tbsp Sesame seeds
For the dipping sauce:
4 tbsp Sweet chilli sauce
2 tbsp Rice vinegar
Recipe:
- Shred the cabbage, juice the limes, and julienne or grate the carrots.
- Add the cabbage, carrots, coriander, lime juice and sesame seeds to a mixing bowl and mix well.
- Divide the filling between the lettuce leaves and wrap the leaf up Roll it up like a parcel and cut in half. If your lettuce leaves are too small to roll (like with baby gems), just use the leaves as little boats and place the stuffing on the top.
- To make the dipping sauce, mix the sweet chilli sauce and rice vinegar in a small bowl. Serve alongside the lettuce rolls.
How to store
Store in an airtight container, in the fridge, for up to 3 days.
