Leftover Roast Veg Butter Cubes
This is a simple way to make leftovers last longer and use them in the New Year. Simply blend your leftover roasted vegetables with butter or vegan butter, then spoon the mixture into ice cube trays and freeze. Add them to any recipe for an extra boost of flavour, such as roasted potatoes or pan-fried vegetables.

Ingredients:
½ cup Leftover roast vegetables (mash potato, carrot, spinach)
½ cup Unsalted butter (room temperature ) / Vegan butter
Recipe:
- Add your leftover roast vegetables into a blender with some cubed, room temperature butter.
- Blend until smooth and the butter and veg are well combined.
- Spoon the mixture into ice cube trays and freeze.
- Keep in the freezer and add to any dish you fancy.

Store in the freezer for up to 3 months.
