Leftover Veg Roast butter Cubes

This is a very simple way of making leftovers last longer and use them in the new year. Simply blend your leftover vegetable roast with butter/vegan butter then spoon into ice cube trays and freeze. Add them to any recipes for a boost of flavour such as roasted potatoes and pan fried vegetables.

Ingredients:

½ cup Leftover roast vegetables (mash potato, carrot, spinach)

½ cup Unsalted butter (room temperature )

Recipe:

  1. Add your leftover roast vegetables into a blender with some cubed, room temperature butter.
  2. Blend until smooth and the butter and veg are well combined.
  3. Spoon the mixture into ice cube trays and freeze.
  4. Keep in the freezer and add to any dish you fancy.
