Leftover Veg Roast butter Cubes
This is a very simple way of making leftovers last longer and use them in the new year. Simply blend your leftover vegetable roast with butter/vegan butter then spoon into ice cube trays and freeze. Add them to any recipes for a boost of flavour such as roasted potatoes and pan fried vegetables.

Ingredients:
½ cup Leftover roast vegetables (mash potato, carrot, spinach)
½ cup Unsalted butter (room temperature )
Recipe:
- Add your leftover roast vegetables into a blender with some cubed, room temperature butter.
- Blend until smooth and the butter and veg are well combined.
- Spoon the mixture into ice cube trays and freeze.
- Keep in the freezer and add to any dish you fancy.
How to store
Store in the freezer for up to 3 months.
