Leftover Roast Veg Melt Wrap Parcels
Quick, simple and just so satisfying. The wraps are stuffed with pureed roast leftovers, fresh herbs, yoghurt, mustard and cheddar then wrapped and cooked in the airfryer or oven.

Ingredients:
300 g Leftover roast vegetables
2 tsp Mustard
2 tbsp Parsley (chopped )
Sea salt
2 Wholemeal wraps
4 tbsp Cheddar (grated ) / Vegan cheese
Recipe:
- Add leftover roast veggies in a mixing bowl along with the mustard. Mash with a fork then mix in fresh parsley and yoghurt. Season to taste.
- Place the wholemeal wraps on a board and spoon the leftover mixture in the middle of each wrap. Top with grated cheddar and fold the sides to close into square parcels.
- Cook in the airfryer for 5-6 minutes at 170C. Enjoy!
How to store
Store in an airtight container, in the fridge, for up to 2 days.
