Fruity Clafoutis
Try this clafoutis cake recipe with any fruits in your Oddbox, such as strawberries, blueberries or apples.

- No rhubarb? Use any fruits you like such as strawberries, blueberries, cherries, apples or pears.

Ingredients:
350 g Rhubarb
1 Grapefruit
160 g Plain flour
60 g Corn flour
100 g Caster sugar (keep 1 tbsp for topping)
4 Eggs
400 ml Milk of choice
a pinch of salt
1 tbsp Butter (for the dish )
Recipe:
- Preheat the oven to 200C/180c fan/6 gas mark. Cut the rhubarb into small chunks and segment the grapefruit.
- Mix together the plain flour, corn flour, 90 g caster sugar, salt and eggs. Add the milk and mix until combined.
- Butter your baking dish and add the fruits. Pour over the batter and sprinkle with leftover sugar.
- Bake at 200C/180c fan/6 gas mark for 40 minutes. Remove from the oven and sprinkle the reserved sugar over while the clafoutis is hot. Let cool and enjoy.
How to store
Store in an airtight container, at room temperature for up to 3 days.
