Total time: 30 minutes
Servings: 2
Ingredients:
2 Pears
1 Egg
50 ml Double cream
50 ml Milk of choice
1 tsp Vanilla extract
1 tbsp Caster sugar
4 Slices of brioche
tbsp Neutral oil (for cooking )
For the caramel:
50 g Caster sugar
50 ml Maple syrup
100 ml Double cream
15 g Unsalted butter
a pinch of Salt
Recipe:
- To make the caramel, heat the sugar and maple syrup in a saucepan over medium heat. Keep stirring with a wooden spoon until it turns a dark amber colour. Add the double cream and cook for 3-4 minutes. Whisk in the butter and pinch of salt, then cook until slightly thickened and golden.
- Cut the pears in quarters, then add them to the caramel and cook for 2-3 minutes over a low heat. Turn off the heat and let the pears sit in the caramel.
- In a large bowl (big enough to fit the brioche slices) add the eggs, double cream, milk, vanilla and caster sugar. Whisk until combined.
- Soak the brioche slices in the batter for 1-2 minutes. You'll need to work in batches for this step.
- Heat a large frying pan over medium heat and add the oil. Add the soaked brioche slices to the pan and cook for 2-3 minutes on each side, until golden brown and slightly firm to the touch.
- Cut the french toasts in half and serve with the caramelised pears and a drizzle of caramel. Enjoy!
