Fondant Potatoes
This fondant potato recipe is a great recipe for the tiny small potatoes in your Oddbox. Cooked with butter, stock and thyme, fondant potatoes are the perfect side to a roast.
Substitutes:
- No thyme? Use rosemary or oregano instead.
- Vegan? Use vegan butter instead.

Ingredients:
500 g Small potatoes
1 tbsp Butter
1 tbsp Olive oil
100 ml Vegetable stock
3 sprigs Thyme
Salt (to taste)
Recipe:
- Preheat the oven to 190C/170c fan/5 gas mark. Peel the potatoes and pat dry with kitchen paper or a clean tea towel.
- Heat the olive oil and butter in an ovenproof pan. Add the potatoes and thyme, and brown all over. This will take about 5 minutes.
- Season well, add the stock, and bring to the boil.
- Transfer the pan to the oven and cook uncovered for 25-30 minutes, or until the potatoes are tender.
How to store
Store in an airtight container, in the fridge, for up to 3 days.
