Prep time: 5 minutes
Cook time: 10 minutes
Total time: 15 minutes
Servings: 2
Ingredients:
3 kiwis
1 tbsp lemon juice
2 tbsp caster sugar (or maple syrup)
Recipe:
Peel and roughly chop the kiwis, then add to a small saucepan with the sugar and lemon juice.
Mix the kiwis, sugar and lemon juice well, and over a medium heat, bring the mixture to a boil. Reduce the heat and simmer for 5 minutes.
Mash slightly with a fork to break up some of the kiwi pieces. If the mixture's too dry, add a splash of water.
Once you've finished mashing, enjoy your compote right away, or store in a lidded container in the fridge for up to one week.
How to store
Store in an airtight container in the fridge for up to 7 days, or in the freezer for up to 2 months.
