Cucumber Tzatziki

Ingredients:

½ Cucumber

1 tbsp Mint leaves (chopped)

1 tbsp Fresh coriander (chopped)

½ Lemon (juiced)

6 tbsp Natural Yoghurt / Vegan yoghurt

1 Garlic clove (grated)

a pinch of Sea salt 

a pinch of Black pepper

2 tbsp Olive oil

Pitta bread (for serving)

Recipe:

  1. Grate the cucumber on kitchen paper or a clean tea towel, and squeeze the juice out.
  2. Add to a bowl with yoghurt, mint, coriander, lemon juice, garlic, olive oil, salt and pepper. Mix well and serve with warm pitta bread.
