Cucumber Tzatziki

Ingredients:
½ Cucumber
1 tbsp Mint leaves (chopped)
1 tbsp Fresh coriander (chopped)
½ Lemon (juiced)
6 tbsp Natural Yoghurt / Vegan yoghurt
1 Garlic clove (grated)
a pinch of Sea salt
a pinch of Black pepper
2 tbsp Olive oil
Pitta bread (for serving)
Recipe:
- Grate the cucumber on kitchen paper or a clean tea towel, and squeeze the juice out.
- Add to a bowl with yoghurt, mint, coriander, lemon juice, garlic, olive oil, salt and pepper. Mix well and serve with warm pitta bread.
How to store
Store in the fridge in an airtight container for up to 3 days.
