Crunchy Cabbage Salad with Dijon-lime Dressing

A cabbage salad with a mediterranean twist, which is all about texture, colours and flavours.

Ingredients:

½ Red cabbage (shredded)

1 Carrot (grated)

1 Red pepper (sliced )

3 tbsp Parsley leaves (roughly chopped )

3 tbsp Dill (roughly chopped )

3 Spring onions (sliced )

2 tbsp Flaked almonds (toasted )

For the dressing:

1 tsp Dijon mustard

1 Lime (juiced )

1 garlic clove (grated )

4 tbsp extra virgin olive oil

salt & pepper (to taste )

Recipe:

  1. Build the salad: Prepare the cabbage, carrot, red pepper, parsley, dill and spring onion. Add to a large mixing bowl and set aside.
  2. Make the dressing: In a small bowl whisk together the dijon mustard, lime juice, garlic and olive oil. Season with a generous pinch of both salt and pepper.
  3. Season the salad: Pour the dressing all over the salad and toss to combine. If you have the time, give the salad 30 minutes to 1 hour in your fridge for the flavours to develop and the cabbage to just slightly soften.
  4. Finish and serve: Give the salad one more toss and serve, garnished with the remaining toasted flaked almonds. Enjoy!

How to store

Store in an airtight container, in the fridge for up to 3 days. If crunch is important to you, store the salad and dressing separately.
