Crunchy 15 min Broccoli Salad 

A 15 minute no-cook recipe that is perfect for days you want a delicious healthy salad but don’t want to use an oven or cookers.

Ingredients:

1 Broccoli

½ Red pepper

½ Red cabbage

3 tbsp Tahini

1 Lemon

2 tbsp kefir

3 tbsp extra virgin olive oil

3 tbsp Water

Salt & pepper

3 tbsp mixed seeds

100 g Feta

Recipe:

  1. Chop the broccoli: Cut the florets into bite-sized pieces and finely dice the stems. The small pieces will soften more and soak up the dressing better than larger pieces will. Add to a mixing bowl.
  2. Add extra veggies: Shred the cabbage and finely dice the red pepper. You can use other veggies such as grated carrot or diced cucumber. Add to the mixing bowl with the broccoli.
  3. Make the dressing: In a bowl, combine tahini, lemon juice, kefir, olive oil, and water. Season with salt and pepper.
  4. Finish the salad: Mix together the dressing and vegetables until well coated. Crumble the feta over and sprinkle with mixed seeds. Enjoy!
