Crispy Roasted Broad Beans

Broad beans are a great source of protein and fibre, as well as vitamins, and these crispy roasted broad beans make the perfect snack, and a tasty alternative to crisps for summer parties. Baked in the oven to crunchy perfection, you can keep it simple or add the spices of your choice such as curry powder, garlic powder, oregano or smoked paprika. 

Substitutes:

  • No broad beans? Use edamame instead. 

Prep time: 10 minutes

Cook time: 20 minutes

Total time: 30 minutes

Ingredients:

500 g Broad beans (in their pods)

1 tbsp Olive oil

Salt & pepper

Recipe:

  1. Preheat the oven to 180C/160 c fan/4 gas mark. Open each pod and pop out the beans into a baking tray. 
  2. Save the pods to make our crispy broad bean pods recipe which is available on our Instagram page. 
  3. Drizzle the beans with olive oil and season with a generous pinch of both salt and pepper. Stir until well coated and roast for 15-20 minutes, until tender on the inside and crispy on the outside. Enjoy!

How to store

We have found these are best eaten on the day but they will keep for up to 3 days if stored in an airtight container.

Roasted broad beans are so versatile; here are some of our favourite ways to eat them:  Snack on the go and a great addition to lunchboxes.  Sprinkled over salads for a punch of flavour and texture.  As a replacement for crisps for gatherings  Stuffed in your wraps for extra crunch.  Served over a creamy hummus.
