Courgette Scarpaccia
Prepare this rustic tart using courgettes and any other vegetable odds and ends.
Substitutes:
- No red onion? Use other vegetable odds and ends from your Oddbox.
- No chickpea flour? Use plain flour instead.
- No garlic powder? Use onion powder instead.
- Other seasonings? Try adding spices such as cumin powder, turmeric, smoked paprika or coriander powder.

Ingredients:
2 Courgettes
½ Red onion
1 cup Chickpea flour
Salt & pepper
1 tsp Garlic powder
Olive oil
Recipe:
- Thinly slice the courgettes and chop the onion, then place in a bowl with a generous pinch of salt. Leave to sit for up to 2 hours.
- Preheat the oven to 200C (180C fan) or gas mark 6. Squeeze out the salted liquid from the softened courgettes, then mix the liquid with the chickpea flour, garlic powder and a pinch of both salt and pepper, before adding the veggies. You want a wet batter, so add water if necessary.
- Place on an oil-greased tray, drizzle oil on top, and bake for 35-40 minutes, until golden and cooked through. Allow to cool slightly, then serve and enjoy.

Store in an airtight container in the fridge for up to 3 days.
