Courgette Carbonara
This courgette pasta recipe is so easy to make and so packed with flavours it will become one of your favourite recipes to make.

Ingredients:
2 Courgettes
150 g Spaghetti
2 tbsp Olive oil
2 Egg yolks / Flax egg
2 Egg / Flax egg
80 g Pecorino cheese (grated )
Black pepper
Flaky sea salt
1 Lemon
Recipe:
- Cook the spaghetti in boiling salted water until al dente, making sure to reserve some of the cooking pasta water.
- Finely slice the courgettes and fry in a pan with olive oil.
- In a bowl, mix together the pecorino, egg yolks, eggs, and a good pinch of black pepper. Add the cooked pasta and a squeeze of lemon juice to the pan with the courgette along with the pecorino mixture and a couple of tablespoons of the pasta water.
- Cook over a low heat for a couple of minutes, until the sauce thickens. Season to taste with salt and pepper and serve.
How to store
Store in an airtight container, in the fridge for up to 3 days. To reheat add a splash of water to the pan too to lose up the sauce and reheat for a couple of minutes.
