Chicory & Apple Salad
This fresh, crunchy salad is bursting with flavour from nutty chicory leaves, grilled sweet apple, pecan nuts and a creamy yoghurt dressing.
Substitutes?
- No yoghurt? Use kefir instead.
- Vegan? Use natural vegan yoghurt instead.
- No pecan nuts? Use walnuts or pumpkin seeds instead.
- No apple? Try with pear or grapes instead.

Ingredients:
3 Chicory
1 Apple
40 g Pecan nuts
For the dressing:
2 tbsp Yoghurt
1 tbsp Olive oil
½ Lemon (juiced)
1 tsp Apple cider vinegar
1 tbsp Water
Salt & pepper
Recipe:
- Core and slice the apple. Heat a griddle pan over high heat on the hob. Place the apple slices on the griddle to cook for 1-2 minutes a side, until charred.
- Remove the outer leaves of the chicory and roughly slice the inner parts. Lay these on a platter.
- In a bowl, combine all of the dressing ingredients and season with a pinch of both salt and pepper.
- When the apple slices are charred, place them over the chicory, along with the pecan nuts.
- Pour over the dressing and serve.
How to store
Prepare the dressing and store in a jar in the fridge for up to 7 days. You can also grill the apples in advance and finish the recipe just before serving.
