Cheesy Onion & Kale Flapjacks
Crumbly and cheesy, these savoury flapjacks are the perfect lunchbox snack or morning pick-me-up. You can whip these up with just a handful of ingredients in less than 20 minutes.
Substitutes:
- No kale? Swap for cavolo nero.
- No cheddar cheese? Use parmesan, gouda or any other cheese with nutty and sweet flavours.

Ingredients:
1 Onion (finely chopped )
30 g Kale (finely chopped )
115 g Unsalted butter
2 tbsp Plain flour
160 g Rolled oats
6 tbsp Cheddar (coarsely grated )
Salt & pepper
Recipe:
- Preheat the oven to 190C/170c fan/gas mark 5. Put the butter and onion in a saucepan and place on medium-high heat for 4-5 minutes, or until the butter has melted and the onion has softened.
- Turn off the heat, and add the flour, oats, kale and grated cheese to the pan. Season with salt and pepper and mix well.
- Line a square 20 x 20 cm baking dish. Tip the mixture into the tin and press down firmly.
- Bake for 25-30 minutes, or until the flapjack is just golden and the cheese has melted. Leave to set and cool for 10 minutes before cutting into 8 bars. The bars will harden as they cool, give them a couple of hours.
