Cavolo Nero Miso Beans
French onion inspired miso beans with caramelised onion, miso, stock, creamy beans, garlic and cavolo nero. Simple ingredients, one-pan, delicious and nutritious recipe with a great balance between sweet, savoury and creamy.
Substitutes:
- No onion? Use shallot instead.
- No cavolo nero? Try with kale, spinach or cabbage instead.
- No parsley? Use chives or coriander instead.
- No cannellini beans? Use butter beans instead.

Ingredients:
1 Onion (finely sliced )
2 tbsp Olive oil
1 tbsp Miso paste
1 tbsp Runny honey (or maple syrup)
2 Garlic cloves (chopped )
200 ml Vegetable stock
100 g Cavolo nero (chopped )
1 can cannellini beans
2 tbsp Parsley (chopped )
Salt & pepper
Crusty bread (for serving )
Recipe:
- Place a frying pan over a medium heat. Add the olive oil and onion. Cook, stirring often, until tender and slightly caramelised, for about 5-7 minutes.
- Add the miso, honey/maple syrup, cavolo nero, garlic and beans. Give everything a good stir then add the stock.
- Cook for 5 minutes, season to taste and serve with bread.
How to store
Store in an airtight container, in the fridge, for up to 3 days, or in the freezer for up to 3 months.
