Carrot, Peach & Burrata Salad
Nabbed yourself a bottle of our new cleaning spray yet, created with Homethings? To celebrate its wonderfully wonky flavours, this new summer salad combines juicy peach with grated carrot. Chop up, eat up, clean up.

Ingredients:
2 Carrot
2 Peaches
12 Cherry tomatoes
1 Burrata
2 tbsp Pumpkin seeds
For the vinaigrette:
5 tbsp Olive oil
1 tbsp Balsamic vinegar
2 tbsp Cold water
2 tbsp Runny honey (or maple syrup)
1 Onion (chopped )
1 Garlic clove (grated )
1 tsp Lemon zest
1 tbsp Basil leaves (chopped )
1 tbsp Parsley leaves (chopped )
Salt & pepper
Recipe:
- To make the vinaigrette, add all ingredients in a glass jar, close with the lid and shake to combine.
- Use a vegetable peeler to thinly slice the carrot, then cut the cherry tomatoes in half and the peaches into wedges.
- In a large bowl toss the tomatoes, peaches, and carrots with 1/3 of the dressing. Let sit 15 minutes at room temperature or up to 4 hours in the fridge.
- Add the salad to a serving plate and top with the burrata. Drizzle with some more vinaigrette and top with pumpkin seeds and additional fresh herbs.
How to store
Store in an airtight container, in the fridge, for up to 2 days.
