Brussels Sprouts & Garlic Spaghetti
A simple pasta recipe in just 30 minutes for those couple of brussels sprouts you haven't come around to cook yet!

Ingredients:
8 Brussels sprouts
1 Garlic clove (sliced )
½ tsp Garlic salt
90 g Spaghetti
1 tbsp Olive oil
2 tbsp Greek yoghurt
1 Egg yolk
½ Lemon
Recipe:
- Cook the spaghetti in boiling salted water until al dente, making sure to reserve some of the cooking pasta water.
- Finely slice the brussels sprouts and fry in a pan with olive oil, garlic, and garlic salt.
- In a bowl, mix together the yoghurt, egg yolk, and a good pinch of black pepper.
- Add the cooked pasta and a squeeze of lemon juice to the pan with the brussels sprouts along with the yoghurt mixture and a couple of tablespoons of the pasta water.
- Cook over a low heat for a couple of minutes, stirring often, until the sauce thickens slightly. Season to taste with salt and pepper and serve.
How to store
Store in an airtight container, in the fridge, for up to 3 days.
