Braised Spring Greens

Braised until tender and topped with lemon juice, this is a great side dish for a spring roast.

Ingredients:

a bunch of Spring greens (sliced)

1 Onion (chopped)

tbsp Olive oil

Salt & pepper

150 ml Vegetable stock

½ Lemon (juiced)

Recipe:

  1. Heat the oil in a high-sided frying pan over a medium heat. Fry the onion for 3 minutes, until fragrant.
  2. Add the spring greens and stock; cook for 5-6 minutes, stirring regularly, until the greens are tender and the stock has nearly cooked away. Squeeze in the lemon juice and season to taste.

How to store

Store in an airtight container, in the fridge, for up to 3 days.
