Blackberry Bircher
A bircher is a great make-ahead breakfast and a handy recipe to have on hand.
Substitutes:
- No blackberries? Try with strawberries or raspberries instead.
- Vegan? Use milk and yoghurt vegan alternatives.
- No walnuts? Use the nuts/seeds of your choice.
- No apple? Try with pear or half banana (mashed) instead.
- No maple syrup? Use honey instead.
- No flax seeds? Try with chia seeds instead.

Ingredients:
150 g Blackberry
1 Apple (grated)
65 g Porridge oats
2 tbsp Flax seed
100 ml Milk of choice
2 tbsp Maple syrup
6 tbsp Natural Yoghurt
6 Walnuts
Recipe:
- Tip the oats and flax seeds into a large mixing bowl.
- In a food processor, add the blackberries (save a couple for the topping), milk of choice and maple syrup. Blend until you have a smooth colourful puree.
- Pour the blackberry puree in the bowl with the oats. Add the grated apple. Mix until combined.
- Layer the blackberry oats and natural yoghurt into individual upcycled jars. Top with a blackberry and walnuts. Cover and reserve in the fridge until ready to eat.
