Avocado Toast 3 Ways

Ingredients:

2 Avocado

3 Slices of bread

For the topping 1:

1 Egg

a pinch of Chilli flakes

1 tsp Capers

For topping 2:

5 Cherry tomatoes

1 tsp extra virgin olive oil

1 tsp Balsamic vinegar (reduction )

1 Garlic clove

For topping 3:

Rocket 

1 tsp extra virgin olive oil

1 tbsp Pumpkin seeds (toasted )

Recipe:

  1. Toast your slices of bread until golden.
  2. Remove the pit from your avocado. Use a big spoon to scoop out the flesh. Put it in a bowl and mash it up with a fork until it’s as smooth as you like it. Mix in a pinch of salt  and add more to taste, if desired.
  3. Spread avocado on top of your toast and follow with the topping of your choice. 
  4. Topping 1: pan fried egg with fried capers and chilli flakes
  5. Topping 2 : slice of bread rubbed with garlic, chopped tomato, extra virgin olive oil, reduction balsamic vinegar, salt and pepper
  6. Topping 3: rocket, extra virgin olive oil, toasted pumpkin seeds, salt and pepper
