Apple Traybake
A simple-to-make apple cake that can be cut into bars or squares for a dessert or teatime treat.
Substitutes:
- No apples? Try with pears, peaches, or plums instead.
- No lemon? Use lime juice instead.
- No cinnamon? Try with ground ginger.

Ingredients:
3 Apples (large)
1 Lemon (juiced )
250 g Unsalted butter (softened )
150 g Caster sugar
4 Egg
2 tsp Vanilla paste
2 tsp Ground cinnamon
310 g Self raising flour
1 tsp Baking powder
50 g Flaked almonds
2 tbsp Brown sugar (for dusting )
Recipe:
- Preheat the oven to 180°C (160°C fan) / gas mark 4. Grease and line a rectangular baking tray with baking paper. Core and thinly slice the apples, then squeeze the lemon juice over them. Set aside.
- Cut the butter into small cubes and place it in a large mixing bowl along with the caster sugar, eggs, vanilla paste, cinnamon, flour, and baking powder. Mix well until smooth.
- Spread the mixture into the prepared tray and arrange the apple slices over the top of the mixture. Sprinkle over the flaked almonds and brown sugar.
- Bake for 40-45 minutes, until golden and a skewer inserted into the middle comes out clean. Remove from the oven and leave to cool for 10 minutes. Then, grab the baking paper to lift the traybake out of the tray and cut into bars or squares.

Store in an airtight container for up to 3 days.
