Apple Pie Chia Pudding

An easy chia dessert with quick caramelised apple chunks.

Ingredients:

2 Apples

55 g Chia seeds

2 tsp Ground cinnamon

1 tsp Vanilla paste

400 ml Almond milk

1 tbsp Vegan butter (or coconut oil )

1 tbsp Light muscovado sugar

2 tbsp Maple syrup (for serving )

Recipe:

  1. In a mixing bowl, add the chia seeds, 1 teaspoon cinnamon, vanilla and milk. Whisk well until combined, cover and set aside in the fridge for 2 hours to overnight. 
  2. Chop the apples and pan fry in vegan butter with muscovado sugar and 1 teaspoon of cinnamon. Cook for 5 minutes, or until tender.

How to store

Store in an airtight container, in the fridge, for up to 3 days.
